The menu is season, including dishes such as Hamachi Crudo with tangerine, yuzu, fennel and dill; Ricotta Cavatelli with smoked lamb, matsutake, chesnut, caraway and puffed rye; and Baja Kampachi with porcini, leek, dill, wild juniper and sorrel. Chef Wambach forages for the wild juniper in the high desert to bring a truly local element to his dish.

The Sands
The Rowan and Hotel Paseo are both ground-up new construction, while the third new hotel offering is an extensive renovation to an existing midcentury property in the city of Indian Wells. Recently opened, The Sands hotel is located next to The Nest, a popular nightlife and dining destination since the ‘60s.
The Sands hotel in Indian Wells
The Sands is a project by PRG Hospitality Group, the group behind Sparrows Lodge and Holiday House hotels in Palm Springs, as well as Colony Palms Hotel, which was sold by PRG in 2012.
