From a churro-flavored iced coffee to grilled cheese reimagined as a dumpling, these are the unique finds and hidden gems you won't want to miss. 

 

1. Concha French Toast & Iced Churro Coffee - Cafecito Calaveras (Cathedral City)

At Cafecito Calaveras, Mexican flavors take center stage. This family-owned spot in Cathedral City started as a food truck and grew into a brick-and-mortar spot that feels equal parts neighborhood hangout and hidden gem. 

The Concha Con Chisme is a twist on the classic French toast, bringing the beloved Mexican pan dulce (sweet bread) to the breakfast plate. Served with Mazapan custard, banana, and raspberries, this one-of-a-kind sweet breakfast is something you won’t find anywhere else. Pair it with the Iced Churro Coffee, one of their many specialty lattes made with brown sugar and cinnamon. These two together make for the most Instagram-worthy breakfast that lives up to its looks. 

Pro Tip: Cafecito Calaveras is open Mon–Fri 7 a.m.–3 p.m., Sat–Sun 8 a.m.– 4 p.m. Also, they are not just a coffee stop — their homemade burritos and chilaquiles are equally worth the trip. 

 

2.  Savory Crepes - Gabino's Creperie (Palm Springs & Indio)

These aren't the delicate, dessert-y crepes that first come to mind when thinking of a crepe. Gabino’s handheld crepes have a signature crunch on the outside and a gooey, generous interior, filled with fresh, high-quality ingredients and finished with a house-made secret sauce. Some menu highlights include the BBQ Chicken with pickles and the Buffalo Chicken Ranch. With two locations in Palm Springs and Indio (and a third coming to La Quinta soon), Gabino’s is the perfect spot to grab a delicious and unexpected bite. 

Pro Tip: Be sure to ask about any off-menu specials and come hungry; their portions are generous! 

 

3. Carne Asada Roll & El Mexicano Roll - Mariscos El Capitan (Coachella) 

In the city of Coachella, you'll find one of Greater Palm Springs’ most exciting flavor mashups: Mexican-style sushi at Mariscos El Capitan. This family-owned seafood restaurant is known for its vivid atmosphere, live music, and diverse menu. 

The Carne Asada Roll is exactly what it sounds like and better than you'd imagine — cream cheese, carne asada, onion, tomato, and cilantro, breaded and topped with cheese. The El Mexicano Roll is also a standout with cream cheese, avocado, and chicken on the inside, breaded with jalapeño and bacon, then topped with carne asada and finished with eel sauce and chipotle. With many other inventive rolls on their menu, Mariscos El Capitan is the spot for creative fusion cuisine like no other.

4. Sushi Tacos - Valley Fusions Food Truck (Palm Springs & Indio)

If you've been to Coachella or Stagecoach festival, you've already met Valley Fusions. Owner Alexis Jimenez launched this mobile concept with his wife, starting at Palm Springs VillageFest on Thursday evenings and building a following throughout Greater Palm Springs. 

The sushi taco is their signature: a handheld blend of seaweed, sushi rice, and fillings like spicy tuna, crab, shrimp tempura, and avocado, finished with a creamy cilantro sauce. It's creative, flavorful, and made with high-quality ingredients. Their menu also includes sushi burritos, poke bowls, and teriyaki bowls, plus fresh agua frescas made with real fruit.

5. The Hulk Burger - Tony's Burgers (Cathedral City)

Their Hulk Burger is truly unique and a feat even for someone with a big appetite. Three 6 oz. beef patties. Four slices of bacon. Three cheeses. Lettuce, tomatoes, onions, and Tony's secret sauce. It’s definitely an unforgettable foodie find.

6. Grilled Cheese Dumplings - Ash & Vine (Palm Springs)

The Grilled Cheese Dumplings have become the dish that diners can't stop ordering or talking about. Served with tomato bisque for dipping, and topped with bacon and chives, they taste like comfort food with an elevated twist. It’s sure to be unlike anything you’ve ever tried before.
