Warm temperatures in the desert call for cool cocktails, and we’re sharing some of our favorite spots to enjoy a summertime drink in Greater Palm Springs!
Heavy velvet curtains mark the entrance to the dimly-lit and mysterious Seymour’s cocktail bar, which shares a building in Palm Springs with Mr. Lyons restaurant. Sip craft cocktails inside to escape the summer heat, or enjoy the mountain views from the patio once the sun starts to set, where you can play bocce ball or lounge around the fire pit. Two excellent summertime cocktail options at Seymour's are the Spring Fling (vodka, pineapple, cucumber, lemon juice, cayenne) and the Thyme after Thyme (Rancho de la Luna mescal, lime juice, agave, thyme liqueur, grapefruit).
THE PINK CABANA
At the beautiful Martyn Lawrence Bullard-designed Pink Cabana restaurant at the Sands Hotel & Spa in Indian Wells, the Cabana Colada is a favorite of guests looking for something refreshing with a bit of a tropical feel, combining gin, coconut cream, fresh lime juice and coconut soda. A new addition to the menu, the Backhand Splash, is sure to be another summertime favorite, featuring rye whiskey, marionberries, fresh lemon juice and basil.
Villa Royale hotel is a great place to enjoy a cocktail, whether in the sexy indoor setting of their restaurant, Del Rey, or sipping poolside to enjoy the beautiful natural scenery. Del Rey general manager Ashley Austin recommends the Miami Vice (Plantation 3 Stars rum, strawberry puree, Coco Lopez cream of coconut, lime) as a “great poolside, daytime drink that feels like an upscale piña colada over ice rather than blended,” and says the “Sounds the Horns (Real McCoy 3-year rum, Velvet Falernum, strawberry peppercorn syrup, lime, egg white) is a great choice for day or evening, with a fruit-forward composition to quench your thirst.”
The Village Pub has been a staple of downtown Palm Springs for over 20 years, and is one of the few local establishments that stays open late until 2 a.m. daily. They also offer happy hour specials seven days a week from 3 p.m. to 9 p.m., with great deals on cocktails, beer and wine. You can order drinks and food from your table using the Village Pub PS app, which also gives you access to “Frequent Villager Rewards,” special events, daily specials and more.
The Ritz-Carlton, Rancho Mirage boasts stunning views of the entire valley, both from the patio of the resort’s State Fare Bar + Kitchen, as well as poolside. The SFB Bloody Mary, made with bacon-infused vodka, is a delicious way to start the day with a kick, or try the popular Wolfskill & Pine cocktail, made from FAIR vodka, lemon, rosemary and Chandon Brut.
The new Tac/Quila restaurant in Palm Springs opened its doors last month to rave reviews, featuring modern Mexican cuisine and drinks. Co-owner Liz Ostoich says their flight of tasting size margaritas is a “fun way to try all four of our specialty margaritas – kiwi mint, pineapple, watermelon and blackberry – and pick your favorite.” Ostoich’s personal favorite is the kiwi mint margarita, made with blanco tequila, fresh kiwi juice, fresh lime juice, Cointreau and house made kiwi agave.
